I Make a Mean Grilled Cheese




Seriously. This is a tried and true way to make the best grilled cheese sandwich ever. Just ask the people who attended the 2015 Blue Lily Reunion. They will testify. Don’t let the addition of mayo freak you out. It helps the cheese to stay melty.

Good bread is essential. If you can get your hands on Grandma Sycamores bread, it's pretty tasty. If not, a good sour dough or whole wheat works  well. 

This recipe is for 4 sandwiches. 

You will need:A

8 slices of good bread  ( If you live in Utah, Grandma Sycamore’s bread worked great for a this recipe although I don’t buy it for anything else. I also like Costo soughdough)
2 cups sharp Cheddar cheese, grated
1 teaspoon finely grated onion (use a microplane like the one shown  below)
1/8 teaspoon fresh ground pepper
2 tablespoons mayonnaise
1/2 stick room temperature butter
2 teaspoons finely grated Parmesan cheese
(Optional 2 tablespoons pimento)

Baking pan (like the one listed below)
Aluminum foil

Preheat oven to 400 degrees.  You are going to bake. NOT broil. Set the rack in the middle of the oven. 

Line the baking pan with foil.

Mix butter with the Parmesan cheese. Butter one side of each slice of bread. Set aside. 

In a mixing bowl, combine the cheese, onion, mayo and pepper (and pimento if you dare to be brave). Mix well. 
Place 4 slices of bread on the cookie sheet buttered side down.
Scoop 1/2 cup cheese and place on each slice of bread. 
Spread the cheese evenly over the bread and top with another slice of bread, butter side up.

Place the cookie sheet in the oven and bake for 8-10 miniutes, until the bread is toasted a golden brown.  ( If it’s not golden, keep toasting)

Remove from oven and transfer the sandwiches to a plate. Let them sit for a minute or two before cutting or the cheese will burn your moth when you take a bite and ruin your whole grilled cheese experience. 

If you want to bump up your grilled cheese  add any of the following:

Pesto and a slice of tomato
Apple and Brown Sugared bacon 
Ham and Jalapeno Jelly
